This is so yummy and the fish crackers make it! Grill up some grilled cheese and cut it out with a cookie cutter and you've got yourself a kid-friendly meal! So fast, so fun, so delicious!
PPM Tip: to make a grown up version, swirl a dollop of prepared pesto into the soup. It transforms it into something amazing! (some of my kids love it, too!)
Recipe adapted from the Food Network
- 1 (28-ounce) can whole tomatoes, in juice
- 1 rib celery, roughly chopped
- 1 cup low-sodium chicken broth
- Kosher salt and freshly ground black pepper
- 1/4 to 1/3 cup cream
Puree the tomatoes
, celery and broth in a blender until smooth. Season, to taste, with salt and pepper. Stir in cream.
Transfer to saucepan to warm through. Can fit perfectly into a thermos for those mamas out there who need some ideas for school lunches:) Don't forget the fish crackers!
